Cupcake Tiers, Flowers & Amaretto – Oh My!

There’s so much I love about this cupcake stand that I can hardly contain myself… but I’ll try! Cupcake display ideas started flowing the minute I put this elegant and detailed 2-tier glass top dessert stand together.

Our cupcake display is easily replicatable and can be color-customized depending on the event. Since we have the whitewashed stand with crystal accents, I decided to also make a white cupcake. What’s fun about these cupcakes is that just by piping various designs with the frosting to represent the different shapes and sizes of the flowers, I was able to make these unique while bringing in pops of color with the flowers.
If you’re using this cupcake tier for a wedding, for instance, you could keep the white theme by picking a variety of white flowers as well. Or, of course, choose the colors of the wedding to echo in this display. I chose to bring in a variety of colors that truly make this a showpiece on its own.

    I wanted an appropriate flavor to match this stunning cupcake display so I chose amaretto liqueur. It also happens to be one of my favorite flavors and I believe these amaretto cupcakes are the perfect little indulgence for this luxurious cupcake tier.

    Almond Cupcakes with Amaretto Cream Cheese Frosting

    Makes about 2 dozen
    • 2 cups all-purpose flour
    • 1 Tablespoon baking powder
    • 1/4 cup cornstarch
    • 1 1/2 cup almond milk
    • 4 egg whites
    • 1 1/2 cup sugar
    • 1/2 cup unsalted butter {softened}
    • 1 teaspoon vanilla extract
    • 1 1/2 teaspoons almond extract

      Amaretto Cream Cheese Frosting
      ½ cup {1 stick} butter
      1 package {8-ounce} cream cheese
      Pinch of salt
      ½ teaspoon almond extract
      3 to 4 cups of powdered sugar
      1 to 2 Tablespoons amaretto liqueur

        1. In a medium bowl, whisk together the flour, cornstarch and baking powder; set aside.
        2. In a small bowl, whisk together the almond milk and egg whites; set aside.
        3. Beat the sugar and butter with an electric mixer until all of the sugar is combined, then add the vanilla and almond extract.
        4. While still beating, alternate adding half of the flour mixture then half of the egg white/almond milk mixture until they are both completely combined. 
        5. Fill cupcake cups halfway and bake at 350 degrees for 20-25 minutes. Allow to cool before frosting.
        6. While cupcakes are baking, prepare the frosting. Beat the butter, cream cheese, salt and almond extract until smooth.
        7. Mix in the powdered sugar one cup at a time and blend well. Pour in the amaretto and mix until the desired icing consistency is achieved.
        This batter makes for wonderful, light and airy cupcakes. Make sure to only fill the cupcake shells halfway. This way they will rise to the perfect level without spilling over.
        If you don’t have amaretto liqueur on hand for the frosting, simply increase the almond extract amount to total one tablespoon.
        This frosting is a great piping consistency. For the various piping designs, I used the large closed star, open star and the plain round tip. Have fun with it and create your own designs! They will all look gorgeous on this cupcake display stand!
